Breakfast Sandwiches!

What started as a Saturday morning college tradition has become a family favorite. This is a sandwich most of you have likely heard of or have accidentally made in various forms of stupor. And if you are new to this delicacy, welcome!

The recipe, should you choose to call it that, could not be more simple. Set out to make a grilled cheese, insert cooked eggs in the middle. Et voilà.

Origin stories are often seen as unnecessary for most people on recipe blogs and sites. Being that this blog is neither of those, you can fully expect I’m going all origin story on you. Let’s begin.

I woke up one Saturday morning (post marching season, of course) in our place in Fox Hill, near JMU. It wasn’t quite breakfast, it wasn’t quite lunch. Nor was it Sunday, so wasn’t quite brunch. (Eat it, Dr. Seuss!) I wanted something hearty but with eggs. So I put two eggs in a pan (Ed. Note: your author recommends one egg if you are no longer of college metabolism level or prefer the #sedimentarylifeTM) mixed ’em up a little and shaped them into the same parallelogram as my bread.

Meanwhile, I buttered two slices of bread, prepared two slices of processed cheese product (I prefer Velveeta but this is and always will be a safe place, dear reader. No Judge. All Love. And by prepared I mean I peeled the plastic off) and made one half of the grilled cheese. Once the bread was just about right, I placed the egg on top of the now-gooey cheese, put the other cheese on top of the egg and the last buttered bread piece on top of that. Flip it over. Listen to the sizzle. Be proud of your life choices.

And that was that. The legend was made. And eaten. Quickly.

Fast forward 20 years (!) and I was looking for a way to spice up the breakfast routine in our house. I proposed the outlandish idea to Supportive Wife and proceeded to make this delicacy for the kids. They loved it. LOVED it. And it has now become the Tuesday/Friday breakfast of choice. (Tuesday and Friday are the special weekdays in our family routine.)
